Buddha Jumps Over the wall (Steamed Abalone with Shark’s Fin and Fish Maw in Broth)


Buddha Jumps Over the Wall is a pot of nutritious Chinese delicacies simmered long and slow until fall-apart tender. It’s a nourishing and banquet-quality herbal soup from the head of Fujian cuisine. 


Origins

Its beginnings can be found in the Tang Dynasty. For a long time, several premium ingredients are combined in the jars of Shaoxing rice wine before being delivered to an officer by the name of Zhou lian. The wide range of appetizing and delectable ingredients employed in this recipe had Zhou Lian in awe of its flavor. Later, he drove alone with Chef Zheng Chunfa to the official residence to study and pay a visit. In order to make this soup taste exquisite, Zheng Chunfa meticulously investigated and reformatted the ingredients. Later, Zheng Chunfa opened a restaurant, and although it wasn't yet called The Buddha Jumping Over the Wall, it quickly gained notoriety. In a certain instance, when the food was served, A scholar claimed that the Buddha had jumped over the wall to try the dish after becoming overwhelmed by its amazing scent. The phrase "buddha jumps over the wall" has since gained its name. Making the traditional Buddha Jumping Over the Wall is a highly laborious process.

Steps

1. First of all, we need to boil the chicken into broth first, let it cool and remove the oil slick on the surface for later use. In addition, soak the medicinal materials such as shiitake mushroom, wolfberry, and jujube in cold water for a day. Blanch the pork tendon and caterpillar fungus, and steam and peel the bamboo shoots and taro.

2. Then, for the frying process, we need to fry the bamboo shoots, pigeon eggs, taro, shallots, garlic, etc. until golden brown. After that, we need to marinate and fry pork ribs and pork tendon in a special sauce. 

3. The most important part is to pour and cook all the ingredients and chicken broth together. The soup will then have a rich and smooth texture with well-defined layers as well as an unforgettable aftertaste. 


A variety of ingredients to create an unforgettable aroma

In order to preserve its original flavor, there are numerous steps and all ingredients need to be processed three days in advance. The recipe calls for upwards of 30 ingredients such as shark fins, chicken, duck, tripe, tendons, ham, gizzards, abalone, scallops, bamboo shoots, fish maws, bird’s nest, shiitake mushroom, hedgehog mushroom, jujube, sea cucumber, and the list goes on. Raw ingredients are cooked into separate, different dishes in order to develop their unique flavors. After that, the dishes are stacked with wine and soup in a clay jar. The jar is then sealed with a lotus leaf before being cooked over a fire.
